HERE’S WHAT YOU WILL NEED
About the process:
You will need about 14 litres of water for mashing and around 11-12 litres to sparge if you are using single infusion mashing. If you are lucky enough to have a Grainfather or similar product, then you can do this as a multi-step infusion mash. The ideal way to brew this beer is by multi-step infusion.
Ingredients:
Water: Finest water you can source. If you are using municipal water which has been chlorinated, you will have much better results if you are able to filter out the chlorine (using an active carbon / charcoal filter). You can boil water for 20 mins to remove chlorine.
Malt Bill: This malt bill is nice and complex for layers of flavour and aroma.
Malt | Weight | Type |
German Wheat Malt | 1.66 kg (36%) | Base |
Light Munich Malt (10 L) | 1.16 Kg (25.5%) | Specialty |
Vienna Malt | 1.16 Kg (25.5%) | Specialty |
Crystal Malt (80 °L) | 500 g (10%) | Specialty |
Caramel Wheat Malt | 84 g (2%) | Specialty |
Carafa Type 3 Malt | 50 g (1%) | Specialty |
Hops Bill: The Fuggle and Mosaic combination gives a nice subtle contribution to this malt-forward beer.
Type | Weight % alpha | Duration | Why? |
Mosaic | 10g (12.5%) | 60 mins | Bittering |
Fuggles | 9g (6.5%) | 5 mins | Aroma and Flavour |
Yeast:
Fermentis WB 06 | Great yeast to get the right flavour profile for the style. |
Brewing Process:
Pitching the Yeast and fermentation: Ferment at 18C for 2 weeks until final gravity is consistent or around 1.007.
Carbonation:
Medium to high level of carbonation: 2.5 -2.7 volumes of CO2.
